Ingredients
- Prima® peaches – A ripe and ready-to-eat peach will feel slightly soft to the touch
- Heirloom or similar style tomato – you want a beefier style tomato
- Extra-virgin olive oil
- White balsamic vinegar
- Basil leaves – you can leave whole or you can julienne
- Mozzarella – you can buy pre-sliced or a log of mozzarella and cut the slices yourself
- Kosher salt
- Freshly cracked black pepper
Directions
- Prep: Slice the tomatoes and mozzarella to about the same thickness. Slice the peaches.
- Plate: On a platter, arrange mozzarella, tomatoes, basil leaves and sliced peaches.
- Season: Drizzle with olive oil and white balsamic vinegar. Season with salt and pepper and top with fresh basil.
