Ingredients

  • Prima® peaches – A ripe and ready-to-eat peach will feel slightly soft to the touch
  • Heirloom or similar style tomato – you want a beefier style tomato
  • Extra-virgin olive oil
  • White balsamic vinegar
  • Basil leaves – you can leave whole or you can julienne
  • Mozzarella – you can buy pre-sliced or a log of mozzarella and cut the slices yourself
  • Kosher salt
  • Freshly cracked black pepper

Directions

  1. Prep: Slice the tomatoes and mozzarella to about the same thickness. Slice the peaches.
  2. Plate: On a platter, arrange mozzarella, tomatoes, basil leaves and sliced peaches.
  3. Season: Drizzle with olive oil and white balsamic vinegar. Season with salt and pepper and top with fresh basil.
