Too Few Harvest Repetitions Results In A Wide Range Of Maturity And Uneven Preconditioning

Fruit must be harvested correctly to be preconditioned successfully. That means several harvest repetitions of the same tree. Otherwise, there will be too much variation in maturity, causing a mixture of overripe and immature along with the desired maturity.

We Harvest Only When Fruit Has Reached Its Peak

  • Preconditioning will not cause unripe fruit to become ripe. Only mature fruit that has reached its peak sugar content should be harvested.
  • Preconditioning will reduce the acid levels and soften the fruit but will not alter the sugar levels.
